I love a cheap meal!
I always love finding a good, frugal recipe that actually tastes good! The kids love this one... and Bomb is very picky these days!
Chili-Cheese Cornbread
2 cans Hormel chili -- any kind you like, we sometimes use the no-beans kind even though the can is slightly smaller than the others and it does fine.
American Cheese slices
1 box Jiffy cornbread mix (and whatever the box says you need to make it)
Spread chili in the bottom of an 8x11" or an 8 or 9" square pan (obviously it ends up thicker this way), layer on enough cheese to cover the chili. Mix cornbread as directed on the package and spread that over the cheese. Bake at 375 "until done", which I've found to be about 20 minutes or so. I serve it with a green salad and it's just perfect for our little family of 4!

Ya ever try to...
... clean with a pounding headache? If you're a mom reading this, then I already know your answer. It's no easy feat and it makes me wish I was a man. Men get a headache and they call in sick to work, crawl into bed, and sleep all day. Women, we tough it out, we go to work (unless we're contagious... there's always that dilemma), we push on.... we cry to our blogs. Don't get me wrong, I don't say this to belittle men... it's just genetics, it's one of a bajillion ways we're wired differently, and today, I wish I was a man.
Well, I've cried to my blog... now it's time to push on and get this pig pen whipped into shape for Bomb's birthday party tomorrow. It's a shame that Advil doesn't come in a nifty roll like Mentos.

I survived
Okay so to be specific, today was Minky's parent/student orientation... so maybe it doesn't count as an actual first day of school. I still found it slightly traumatic though.
At any rate, she refused pictures so I've got nothing for ya. When we first got there, her dad and I looked at each other and said "Holy Crap, she's the tallest kid here!" I never kept up with her growth chart in comparison to kids her age... I always told her doctor "I don't care where she ranks unless it's a concern." so I had no idea how SHORT "normal" kids are! LOL I thought maybe she was too old for the class (even though it's a 4-to-5-year-old group) but it turns out a good percentage of the class is or will soon be 5 years old... Minky's just a super-model in training (thick eyelashes... long legs... Heaven help us!)

Tomorrow is Minky's first day of preschool. She's going Mondays, Wednesdays, and Fridays in the mornings. It really REALLY seems like just yesterday that she was born.... BORN! And now she's going to school. *sigh* The graphic of the day is for her. My big girl!
Oh yes and Wednesday Bomb turns 3... geez. They're going to be mouthy, sleeping-til-noon teenagers in the blink of an eye!

Oy Vey!
The kids and I just returned from a week at my mom's house, helping her take care of my baby sister (10) while my mom worked the night shift. It was a looooong but fun week and it's good to be home! Now I just have to get this place in proper condition for Big D's birthday party next weekend. Oy... no rest for the weary.
